Christmas dinner


Christmas is a pretty big occasion in my household. Not because it's Christmas but because it's also my Dad's birthday.
Each year we try and top the last dinner by making something different so this year in our feast we made: Roast turkey, baked ham, roast veal rib, salmon en croute and veal wellington, with the usual veggies; sprouts with chestnuts, carrots, broccoli, roast spuds and potato dauphinoise.
Last year we had veal rib and when we saw it again for sale on Waitrose it was a sign to make it again, this time it was with a diijon mustard and dried wild mushroom crust and this time it was equally if not more delicious... I would thoroughly recommend veal rib to anyone who wants something different from beef or anyone that likes their beef cooked more well done

Minnie Mouse Birthday cake




It was my niece's 2nd birthday so we decided to arrange a little birthday party for her. And what's the most important thing at a birthday party ?!? CAKE!!
We left it to the last minute so we didnt have time to bake a big enough cake so we bought in Victoria sponge from the supermarket and ready made icing from HobbyCraft. I've never decorated a cake before so this was my first attempt and not bad if I may say so myself.
Butter cream icing was spread over each cake to help the fondant icing stick
The bottom layer was cut from a larger rectangle cake and covered with white fondant icing. The Mickey and Minnie Mouse heads were cut out of black fondant with little circle cutters, all stuck on with a little water.
The 2nd layer was cut from the remainder of the large rectangle cake and covered with pink fondant icing. I was hoping it would be red but HobbyCraft had run out of red icing. The white spots cut out from white icing and again stuck on with a dab of water.
The top layer was a small Victoria sponge round cake covered with black fondant. The ears were oat cakes covered with black icing. I had to cut a slit in the cake and dig the ears in to make sure they would stand upright. I think anyone wanting to recreate this should use a stronger biscuit like rich tea or digestive. Oat cakes were a bit flimsy and one broke so it was precariously held up by digging the ear in the cake more and by hope.
The bows were easy to make; just a long strip of icing, then folding both ends into the middle and then squeezing the middle so it would hold. Use another strip of icing to cover this to look like a bow.

All in all the cake took about 2-3 hours to decorate. Not bad for a beginner I think.

Next year I think demands a grander cake and more planning!!
